Chicken Burrito Bowls

Meal Prep - Chicken Burrito Bowls

Super easy and customizable to however your family likes it! Freezes great. Perfect grab and go meal.

INGREDIENTS:

  • 2 Boneless Chicken Breasts

  • Bell Peppers ( I mix 2 red and 2 green), sliced

  • 1 Large Red Onion, sliced

  • Rice (whichever kind you prefer)

  • Corn (or you can substitute beans or anything else you like)

  • Jarred Salsa

  • Olive Oil, Chili Powder (or taco seasoning), Salt & Pepper


DIRECTIONS:

Step 1:

Line a sheet pan with non-stick foil. Put the 2 chicken breasts in the center of the pan and surround with onions and peppers. Drizzle olive oil on the chicken and rub in chili powder, salt and pepper (or taco seasoning). Drizzle the veggies with oil and add salt and pepper, then mix to coat. Top the chicken with a spoonful or two of salsa.

Step 2

Bake at 425 for 30-35 min. While it’s baking, cook your rice and corn or beans. Once done, plate it all up and garnish with some avacado, sour cream, cheese, whatever you like! Put leftovers in meal prep containers for use later in the week…or freeze them for another time.
